 Step 2: Prepare the Groundnuts

The next step is to prepare the groundnuts for the soup. Start by soaking the groundnuts in water for at least 4 hours or overnight. This will help soften them and make them easier to blend into a smooth paste later on. Once they are done soaking, drain off any excess water and set aside.

Step 3: Cook the Onion and Garlic

Heat some oil in a large pot over medium heat and add in the diced onion and minced garlic. Cook until they are softened and fragrant, about 5 minutes. Then add in all the spices (ginger powder, cumin powder, coriander powder, paprika powder) and stir until everything is combined.

Step 4: Add in Groundnuts and Tomato Paste

Add in the prepared groundnuts along with the tomato paste and stir until everything is combined. Then pour in 4 cups of vegetable broth or water (depending on how thick you want your soup). Bring it to a boil then reduce heat to low-medium heat and let it simmer for about 20 minutes or until the groundnuts are cooked through.

Step 5: Blend Soup into Smooth Paste

Once the groundnuts are cooked through, use an immersion blender or regular blender to blend everything into a smooth paste (you may need to add more liquid if it’s too thick). Taste for seasoning then adjust accordingly with salt and pepper if needed. Serve hot with your favorite sides!
